Zucchini Torte—moist, tender, fragrant and light, with delicate, milk chocolate mascarpone cream. The cake itself is vegan, so if that’s your thing, you can eat it as is. You’ll need a medium size zucchini, grated, 100 ml of oil, 200 gr of brown sugar, a pinch of salt, 1tsp of baking powder and 250 gr of flour. Mix everything together and bake for 35-40 minutes at 180C/350F. Classic Victoria Sponge Cake A beautiful British classic, the victoria sponge is a gorgeously 'low maintenance' cake which is perfect for special occasions or a long weekend treat with friends and family. Ingredients: 200g butter, softened 200g caster sugar 4 eggs 200g self raising flour ½ jar good quality strawberry jam 300ml double cream Instructions: 1. Line a cake tin with greaseproof paper and preheat the oven to 190°c. 2. Cream the butter and sugar together until they are light and creamy. 3. Add the eggs and beat into the mixture. If it is a little lumpy or separates then don't worry. 4. Add the flour and fold in until well incorporated. 5. Pour into a cake tin and bake for 25 minutes until the cake is springy to the touch, golden brown and a skewer poked into the cake comes out clean. 6. Leave the cake to cool in the tin for 5 minutes. Then turn out onto a wire rack to cool completely. 7. Cut the cake in half and spread half a jar of strawberry jam onto one side of the cake. 8. Whip up the double cream to form soft peaks and spread on top of the strawberry jam. 9. Sandwich the cake together and dust some icing sugar over the top of the cake and serve! Pimp Your Dish ✔ Add chopped fresh strawberries in the middle of the cake for a fruity finish ✔ Mix some lemon zest or vanilla bean paste/extract in the whipped double cream Substitute Your Store Cupboard ✔ Strawberry Jam - Raspberry Jam or Lemon Curd ✔ Double Cream - Butter Cream (whip up some buttercream instead beating 600g of icing sugar and 300g of softened butter until light and fluffy) Serves 12 1 hour recipe

Is it time for pumpkin yet?? 🎃 ~PUMPKIN CREAM CHEESE COFFEE CAKE~ FILLING: * 2 8-oz. packages regular cream cheese, room temperature * ⅓-1/2 cup pumpkin puree * ½ cup sugar * 1 teaspoon vanilla extract * 1 large egg, room temperature CAKE: * 3 cups all-purpose flour * 1 teaspoon baking powder * ½ teaspoon baking soda * ½ cup (1 stick) salted butter, room temperature * 1 cup sugar * 4 large eggs, room temperature * 2 teaspoons vanilla * 1 cup sour cream STREUSEL TOPPING: * ¼ cup sugar * ¼ cup flour * ½ teaspoon cinnamon * ⅛ teaspoon ground nutmeg * 3 tablespoons butter, chilled and cubed GLAZE: * ¼ cup confectioners sugar * 1 ½ teaspoons milk * 1 teaspoon vanilla 1. Preheat oven to 350 degrees F. 2. Grease with butter or spray a 13 x 9 cake pan and set aside. 3. To make the filling: In the bowl of an electric mixer fitted with the paddle, mix together the cream cheese, pumpkin , sugar, egg and vanilla on medium-low speed until creamy. Try adding ⅓ cup of pumpkin first; add more if you like pumpkin. Set aside the filling. 4. To make the cake batter: In a medium bowl, stir together flour, baking powder, and baking soda until well combined. Set aside. 5. In the bowl of an electric mixer fitted with the paddle, cream together the butter and sugar on medium-low speed. Add eggs one at a time. Add the vanilla extract. Slowly pour in the flour mixture alternating with the sour cream until all combined. 6. Spread half of the batter into the prepared cake pan with a spatula. Spread the cream cheese filling evenly on top. Top with remaining cake batter and smooth with a spatula. Using a butter knife, gently swirl in the batter. 7. To make the topping: Add the sugar, flour, cinnamon, nutmeg, and chilled butter in a small bowl. Stir using a fork or pastry blender until the mixture is crumbly. Sprinkle the streusel on top of cake batter. 8. Bake for 40-45 minutes until a cake tester inserted in the center comes out clean. 9. To make the glaze: In a small bowl, combine confectioners sugar, milk, and vanilla until creamy. Drizzle over cake. Enjoy!

Happy Thursday Guys ☀️| Is everyone enjoying this gorgeous sunshine? I’m starting my post off like a true Brit - weather talk 🤣 I can’t help it though. We don’t get much sun in this part of the world, so when it shines, we all get a wee bit excited don’t we?! 🍹 I fully embraced the rays today - straw hat out, flip flops on, jug of iced cordial made. I had the girls and bambinos over today, so I had a go at making a marrow and pecan cake to accompany the iced drinks. I was inspired by one of the bakes over at @cakeawaycookbook. I had a ginger cake ready just in case it turned out badly (it was touch and go at times 🙈) but luckily it was a hit. The ginger cake barely got a look in! Poor thing! Früher mochte ich gar keinen Karottenkuchen, naja obwohl das vermutlich eher daran lag, dass Karotten Gemüse sind und ich alles was im entferntesten mit Gemüse zu tun hatte verweigert habe. Aber bei unserem letzten Schottland Urlaub bin ich dem Karottenkuchen hoffnungslos verfallen. In einem kleinen Cafe hab ich meinen ersten Karottenkuchen, in einem rießen Ohrensessel der so aussah als hätte die Queen persönlich schon drin gesessen, genossen. Dazu noch eine leckere heiße Schokolade mit Zimtsirup - allein deswegen würde ich sofort wieder nach Schottland reisen 😀 Außerdem erinnert der Kuchen mich immer ein bisschen an Weihnachten mit seinem Geschmack nach Zimt, Nelken und Muskat. Und nicht zu vergessen das süße Frosting oben drauf 😍😍 einfach himmlisch. Deswegen musste ich diesen Küchentraum unbedingt Zuhause nachbacken. Weil Karottenkuchen doch etwas gehaltvoller ist als andere habe ich mich für eine kleine Springform entschieden. Genau richtig für 4 Personen :)

Move over lemon drizzle and make way for the fresh and fruity flavour of our fluffy orange & coconut drizzle loaf! 🍊⠀ ____________________⠀ ⠀ 🛒 You’ll need:⠀ ⠀ 115g Butter⠀ 115g Sugar⠀ 2 Eggs⠀ 170g Self-raising flour⠀ 55g Desiccated Coconut⠀ 2 tablespoons Milk⠀ 115g Icing Sugar⠀ 1 Orange⠀ Dried Oranges⠀ ____________________⠀ ⠀ Method:⠀ ⠀ 1) Preheat the oven to 160C, line a loaf tin with baking paper, cream the butter and sugar together in a mixing bowl and beat the eggs together in a jug.⠀ ⠀ 2) Add the eggs to the recipe a little at a time and stir in some of the flour. Fold in the coconut and flour, pour in the milk and beat the mixture.⠀ ⠀ 3) Pour the mixture in to the prepared loaf tin and sprinkle with left over desiccated coconut. Place in the oven for 50 minutes or until golden brown and baked through. Leave to cool for 10 minutes before removing from the tin and leaving to cool on a wire rack.⠀ ⠀ 4) Combine the icing sugar and the juice of one orange and drizzle on to the cake once cooled completely. Пора собирать урожай! Грушево-шоколадное чудо не оставит вас равнодушными! Ингредиенты: 🔸груша 4 шт 🔸масло сливочное 80 гр 🔸яйца 2 шт 🔸сахар 150 гр 🔸молоко 150 мл 🔸мука 200 гр 🔸разрыхлитель 1,5 ч.л. 🔸горький шоколад 70-100 гр Приготовление: Груши помыть и нарезать тонкими слайсами, удалить сердцевину. Отделить белки от желтков. Белки взбить до плотной пены. В отдельной миске взбить размягченное сливочное масло, сахар, желтки. Добавить молоко и муку с разрыхлителем, взбить миксером до однородности. Аккуратно вмешать лопаткой взбитые белки. Разделить получившиеся тесто на две равные части. В одну половину дабавьте шоколад (натёртый или мелко поломанный), у меня были шоколадные капли. Выложить тесто с шоколадом в смазанную форму, затем выложить 2/3 всех нарезанных груш, выложить вторую половину теста и красиво выложить оставшиеся нарезанные груши. Выпекаем в духовке при 190 градусах 45 минут. Cake salé par Linda ingredients La base : 200g de farine - 1 sachet de levure chimique - 4 oeufs - 7 cl d’huile d’olive - 12,5 cl de lait - 100g d’emmental râpé La garniture : poivre - sel (optionnel) - herbes de provence (optionnel) Couper : (ajuster selon votre convenance) 1/2 courgette en fines lamelles 2 gros champignons en fines lamelles ou en dès 1 poivron rouge ou jaune en dès 10 olives dénoyautées 7 tomates séchées 1 paquets de lardons ou 1/2 bâton de chorizo coupé en fines rondelles cuisson - La garniture : Dans une poêle chaude, température moyenne, si votre choix s'est porté sur les lardons, faites les revenir, enlever de la poêle et réserver Dans la même poêle, faire revenir les autres ingrédients (courgettes, champignons et poivron) , mélanger et surveiller jusqu’à cuisson puis laisser refroidir. - La base : Préchauffez le four à 180°C (Thermostat 5-6) Dans un saladier, mélanger la farine et la levure et creuser un puits Dans ce puits, ajouter les œufs puis à l’aide de votre spatule, mélanger ces ingrédients délicatement tout en y incorporant le lait, puis ajouter l’huile Ajouter l’emmental râpé - Le mélange : Ajouter les éléments de la garniture dans la base, poivrer et ajuster l’assaisonnement, mélanger et verser dans un moule à cake. Poivrer et ajuster l’assaisonnement. Enfourner pendant 45 à 50 minutes à 180°. Pour savoir si c’est cuit, piquer la pointe de votre couteau qui doit ressortir soit sèche ou un peu humide. Si le couteau ressort un peu humide, éteignez le four et laisser le cake à l’intérieur quelques minutes. 🍓ТОРТ-МОРОЖЕНОЕ С МАСКАРПОНЕ 🍓 Рецепт: Сливки 10%- 150 мл Сахарная пудра - 100-150 г Маскарпоне - 250 г Клубника - 250 г Шоколадный маскарпоне - 180 г Печенье (можно шоколадное) - 8 шт Приготовление: 1. Сливки налейте в миску, добавьте сахарную пудру, маскарпоне и взбейте миксером. 2. Клубнику нарежьте пластинками и разложите по дну и стенкам небольшой формы. Сверху выложите половину сливочной массы и уберите в морозильную камеру на 1 час. 3. Затем по середине замороженной массы, параллельно длинной стороне, распределите шоколадный маскарпоне и залейте оставшейся сливочной массой. Сверху уложите шоколадное печенье и уберите в морозильную камеру на 2–3 часа. ВАЖНЫЕ МОМЕНТЫ: 1. Клубнику режьте тооненькими слайсами 2. Если не найдёте шоколадный маскарпоне- думаю можно немного обычный маскарпоне взбить с какао. 3. И обязательно взбивайте крем в пышную массу. Я отделалась всего лишь венчиком- но воздушнее и правильнее будет взбить миксером!) 4. Лучше готовить десерт перед самой подачей. В морозильнике более 2-3 х часов его не оставляйте. Хранить в холодильнике 5. Можно собирать торт наоборот ( сначала печенье, потом крем, и сверху клубнику для украшения) 6. Но если сверху будете класть печенье, то немного «притопите» печенье в креме. Чтобы когда вынимали из формы они не отлетели. 7. Перед подачей лучше немного подержать при комнатной температуре. Кто будет делать- отмечайте меня, буду смотреть!)
