It'll surely be a hit with the whole family!⠀ ⠀ INGREDIENTS⠀ ⚪ 2 large oranges⠀ ⚪ 6 eggs⠀ ⚪ 2 cups ground almonds (almond meal)⠀ ⚪ 1/2 cups sugar⠀ ⚪ 1 teaspoon baking powder⠀ ⚪ 1 tsp vanilla extract⠀ ⠀ INSTRUCTIONS⠀ ⚪ Preheat oven to 350 degrees.⠀ ⚪ Wash oranges and place in saucepan. Peel and all! Cover with water until oranges are submerged. Bring to boil and then reduce to medium heat. Simmer for 2 hours. Drain the pot and let the oranges cool.⠀ ⚪ Once cool, cut in half and remove the stalk and seeds. Cut into chunks and place orange chunks in the blender. (including the rind!) Puree completely. Set aside.⠀ ⚪ In separate bowl, whisk eggs and sugar until combined⠀ ⚪ Add orange puree and vanilla⠀ ⚪ Mix in almond meal and baking powder⠀ ⚪ Grease 10 in springform pan, pour in batter⠀ ⚪ Bake for approx 1 hour 10 min. Check doneness with toothpick. ❤️Keto Eggplant and Zucchini “Lasagna” Recipe❤️ Prep Time: 1 hour Cook Time: 25 minutes Yield: 9 servings 1x Category: Dinner, Entree' Cuisine: Italian Ingredients 2 medium eggplants (1000 g) 3 zucchinis (360 g) 1 medium onion, peeled and diced (110 g) 2 Tablespoons of olive oil (30 ml) 2 cloves of garlic, peeled and diced (6 g) 34 white button mushrooms, finely diced (340 g) 1 lb of ground beef (450 g) 1 can of diced tomatoes (400 g) 2 Tablespoons of gluten-free tamari sauce or coconut aminos (30 ml) 1 Tablespoon of sesame seeds (14 g) Sea salt Pepper, to taste Chopped flat leaf parsley, for garnish (optional) Instructions To create the lasagna “noodle” layers:Slice the eggplant and zucchini into 1/4-inch thick slices and then salt them well. Let the water drain out of the slices for around an hour (place onto racks if possible). Dry them off well with paper towels. To create the beef layers:Fry the onions, garlic, beef, and mushrooms in some olive oil until the beef is browned and there’s no water at the bottom of the pan. Then add in the tomatoes and gluten-free tamari sauce and cook until most of the liquid has evaporated. Season with salt and pepper, to taste. To put the lasagna together:Preheat the oven to 375 F (190 C). Pour a layer of the beef mixture into the bottom of a baking tray and then top with eggplant and zucchini slices. Then add another layer of beef followed by another layer of eggplant and zucchini. Sprinkle sesame seeds on top and bake, covered with foil, for 20 minutes. This is a favourite of mine and is easy to prepare! If you have tried cabbage and carrot salads from Splash or Suwana's, this is what it reminds me of! 😋 Some people will buy pre-shredded carrot and cabbage to save time. I usually cook the protein separately, white fish or chicken would go best. Double recipe to make more servings if you want leftovers! I used a big head of cabbage and 3 carrots in mine! Chop Chop Thai Salad Ingredients Salad 2 boneless skinless chicken breasts 1 small head green or white cabbage (2 cups shredded) 1 large carrot (1½ cups shredded) ½ cup fresh cilantro ½ cup green onions ½ cup chopped peanuts Dressing 2 cloves garlic 3 chili peppers or ½ teaspoon minced hot pepper / to your heat standards 2 tbsp soy sauce 2 tbsp vinegar 2 tbsp organic sugar 1 tbsp fresh lime juice 1 tbsp oil (olive/nut oil) ½ tsp fish sauce ¼ cup natural peanut butter ¼ cup water Instructions Bring a large pot of water to boil. Add the chicken breasts, cover, and cook for 15-20 minutes (you can add a chopped onion and season with salt/pepper). When the chicken is done, remove from heat, drain water, let cool, and shred with two forks. Chop the cabbage into very thin pieces, like it would be for coleslaw. Peel and grate the carrots. Roughly chop the cilantro and green onions. Toss the chicken and vegetables in a large bowl and keep chilled. Mince the garlic and chili peppers. Place garlic and peppers in a small mixing bowl with the soy sauce, vinegar, sugar, lime juice, oil, and fish sauce. Whisk until smooth. Add the peanut butter and water and whisk again until smooth and creamy. Toss the salad with the dressing. Add the crushed peanuts. Serve chilled. Leftovers can be stored in the fridge for up to one day. For best results, keep the leftover salad and dressing separate until ready to serve. 🧡 Here is an idea for probably the cheapest & cutest side table! Wooden crates found at most craft stores! I’ve been in love with how simple and adorable it looks next to our futon/couch. You can sand and paint/stain them, but I am in love with the bare wood color! Michaels craft store, Joanns fabric store, etc will usually have them in stock. Yes, they also sell them at Home Depot, but they always seem to be much nicer when bought at a craft store! They run for about $12 each. You can even make book shelves, shoe racks, coffee tables, closet shelving, etc!

Coming at you with another amazing recipe this week everyone! This Turkey (or chicken) meatloaf is sure to be a family favourite and packed full of flavour! We hope you try it, and enjoy it as much as we do ♥️ • healthyeating nutritioncoach wellnessgals • Turkey Meatloaf • 2 packs of ground turkey or chicken 1 red pepper, cut up into small pieces 1/2 white onion, cut into small pieces 1 tsp minced garlic 1/4 cup reduced sodium soya sauce 3/4 cup chicken broth 2 tbsp tomato paste 1 cup egg whites (or 4 whole eggs) 1 cup old fashioned oats 1/2 cup sugar free ketchup Pepper to taste • Directions: • Preheat oven to 350. Place red pepper and onion in a pan and cook until translucent. Add garlic, pepper, tomato paste, soya sauce and chicken broth to the peppers/onion. Mix well and set aside to cool. While your pan cools, mix together your turkey or chicken, oats and eggs. Fold in the pepper/onion mixture and spread all into a 9x9 pan, lined with parchment paper. Top with ketchup and cook for 1 hour 20 min • This meatloaf freezes so well, easy to make ahead and grab on the go for a quick meal! Enjoy!

My holiday pizza I usually make around Christmas for parties, but the fam wanted it today, so... Since I make homemadepizza on Saturdays, that’s what you see here! It’s a riff on the QuattroStagioni style, with however many stagioni we wanted. Mom is diabetic and prefers really thincrust or wholewheat in the crust, so I did both. *SWIPE FOR ALL PICS* Introducing my LasagnealForno! THE COMPONENTS: 1. This is a five-layer lasagne. If you look closely under the top layer, there’s a thin layer, which blankets a super-velvety fresh besciamella I made with a pinch of formaggio. On top of the meat and sauce layers are dedicated porcini mushroom layers. (I also tucked more besciamella atop each layer.) 🤤 2. I make flat egg pasta for my lasagne al forno, not the curly storebought American kind. 3. I used the fabulous homemade sauce I posted the other day, which I had freshly canned. 4. What you see oozing out is a happy marriage of besciamella and melted provolone. (As I’ve mentioned, I prefer provolone to mozzarella; provolone is more unctuous! I’ve also shown you how I make my own ricotta by hand using whole milk, but I never use ricotta in my lasagna.) Todos los que me conocen de cerca, han oído hablar de la torta de limón de mi mamá. . Recreando esa receta de Panqué de limón 🍋💚 salió esta versión saludable riquísima y aprobada por ella 😬. . INGREDIENTES: •4 limones •8 claras de huevo •8 yemas •1 tz de azúcar de coco •3 cdas de sacarina líquida •3/4 tz de aceite de coco •3 tzs de harina de trigo integral •Leche de almendras (un chorrito) •1 sobre de polvo de hornear (1cda aprox). . PASOS: Batir claras a punto de nieve y apartar. En un bowl grande, mezclar las yemas, el azúcar y el aceite, integra bien cada ingrediente antes de añadir el próximo. Rallar la corteza de los 4 limones (sin llegar a la parte blanca), agrega la ralladura a la mezcla junto con la harina, el polvo de hornear y, de último, añade las claras batidas + la leche que haga falta hasta conseguir la consistencia deseada. .
